
Yerba Mate Pancake
Who says yerba mate only goes with mate?
This yerba mate pancake is proof that tradition can be reinvented: and be deliciously surprising!
How about trying this recipe for breakfast this weekend?
Ingredients:
For the dough:
- 1 egg;
- 2 tablespoons of sugar;
- 1 tablespoon of oil;
- ½ cup of milk;
- 1 tablespoon of yerba mate;
- 6 tablespoons of wheat flour;
- 1 teaspoon of vanilla essence;
- 1 teaspoon baking powder;
For the cover:
- 100 g milk chocolate;
- 200 g heavy cream;
Directions:
Mix together the egg, sugar, oil and milk. Sift in the yerba mate, flour and yeast. Mix until you have a homogeneous batter. Pour the equivalent of a ladleful of batter into a heated, greased frying pan or pancake dish and brown on both sides.
For the topping, melt the chocolate and mix with the cream and cover the pancakes.
Madrugada tip: use strawberries to decorate, as well as adding a pretty touch, the recipe is delicious!
